Whole Strawberry Jam

 

 

 

2 ¼ lbs Small Strawberries

3 tbsp Lemon Juice (1 Large Lemon)

3 lbs Sugar

½ Bottle Certo

 

 

 

1.         Prepare the fruit and put into a pan with the lemon juice and sugar and

stand for 1 hour, stirring occasionally.

 

 

2.         Heat slowly, until the sugar has dissolved, stirring occasionally, add a

small knob of butter or margarine.

 

 

3.         Bring to a full rolling boil and boil rapidly for 4 minutes.

 

 

4.         Remove from the heat, add the Certo, and leave to cool for 20 minutes

to prevent floating fruit.

 

 

5.         Skim, pot and cover in the usual way.
