Tomato Marmalade

 

 

 

3 ½ lbs Sugar

2 lbs Ripe Tomatoes

½ Breakfast Cup Water

4 Lemons

1 Bottle Certo

 

 

 

1.         Scald, peel and crush the tomatoes.

 

 

2.         Slice fine and cut the lemons into small pieces, removing the pips, add

to the tomatoes with ½ breakfast cup of water.

 

 

3.         Bring to a boil and simmer for 15 minute, stirring occasionally.

 

 

4.         Measure the sugar into a large preserving pan, add 2 lbs prepared fruit

making up the weight with water if necessary.

 

 

5.         Mix well, bring to a full rolling boil, stir constantly boil for 3 minutes.

 

 

6.         Remove from the heat, stir in the Certo.

 

 

7.         Skim, pot and cover in the usual way.
