Tomato Jam

 

 

 

2 ½ lbs ripe Tomatoes

1 Lemon

3 lbs Sugar

1 Bottle Certo

 

 

 

1.         Scald and skin the tomatoes.

 

 

2.         Place the tomatoes in a large saucepan with the grated lemon rind,

bring to the boil and simmer, covered for 10 minutes.

 

 

3.         Add the lemon juice and sugar, heat slowly, stirring occasionally, until

the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil rapidly for 5 minutes.

 

 

5.         Remove from the heat and stir in the Certo.

 

 

6.         Skim, pot and cover in the usual way.
