Strawberry and Gooseberry Jam

 

 

 

1 lb. Gooseberries

4 tbsp. Water

1 lb. Strawberries

3 lb. Sugar

½ Bottle Certo

 

 

1.         Top, tail and wash the gooseberries.

 

 

2.         Crush and measure 1 lb. into a large saucepan with the water.  Bring

to the boil, stirring, then simmer, covered for 15 minutes.

 

 

3.         Crush the strawberries thoroughly and add to the gooseberries with

the sugar.

 

 

4.         Heat slowly until the sugar is dissolved, stirring occasionally.

 

 

5.         Bring to the full rolling boil and boil rapidly for 2 minutes.

 

 

6.         Remove from the heat and stir in the Certo.

 

 

7.         Stir and skim alternately for 5 minutes to cool and prevent the fruit

from floating.

 

 

8.         Pot and cover in the usual way.
