Strawberry Jelly

 

 

 

3 lbs Strawberries

¼ pint Water

Juice of 2 Lemons

3 ¼ lbs Sugar

1 Bottle Certo

 

 

 

1.         Crush the fruit thoroughly and simmer gently with the water for 10-15

minutes until tender.

 

 

2.         Strain though a jelly bag and measure the juice into a pan, if

necessary make up to 2 pints with water.

 

 

3.         Add the sugar and lemon juice, heat gently, stirring occasionally, until

the sugar has dissolved.

 

 

4.         Bring quickly to a full rolling boil and boil rapidly for 2 minutes.

 

 

5.         Stir in the Certo and continue boiling for 1 minute, stirring occasionally.

 

 

6.         Remove from the heat, skim if necessary, pot and cover in the usual

way.
