Rowan Jelly

 

 

 

5 lbs Rowan Berries

2 pints Water

3 ¼ lbs Sugar

½ Bottle Certo

 

 

 

1.         Take the berries, not too ripe, wipe well, and pick off the stalks.

 

 

2.         Place in a preserving pan with the water.

 

 

3.         Boil until quite soft, mashing well with a wooden spoon.

 

 

4.         Strain through a jelly bag or muslin.

 

 

5.         Measure 2 pints of juice into a large saucepan, add the sugar and heat

slowly, stirring occasionally until the sugar has dissolved.

 

 

6.         Stir in the Certo and bring to a full rolling boil, and boil rapidly for 30

seconds.

           

 

7.         Remove from the heat, skim, pot and cover in the usual way.
