Ripe Quince Jam

 

 

 

3 lbs Quinces

3 lbs Sugar

1 Lemon

½ bottle Certo

 

 

 

1.         Use only fully ripe fruit.

 

2.         Peel and core the quinces.

 

3.         Chop up the fruit as finely as possible.

 

4.         Add ½ pint of water and the juice of 1 lemon.

 

5.         Bring to a boil and cover and simmer for 15 minutes.

 

6.         Measure the sugar and 2 ½ lbs prepared fruit into a large preserving

pan and mix well.

 

7.         Heat slowly until the sugar has dissolved.

 

8.         Bring to a full rolling boil.

 

9.         Stir constantly, before and while boiling.

 

10.       Boil hard for 1 minute.

 

11.       Remove from the heat and stir in the Certo.

 

12.       Skim, pot and cover in the usual way.
