Ripe Pineapple Jelly

 

 

 

 

2 ¾ lbs Sugar

2 Medium Pineapples

1 Bottle Certo

Juice of 1 Lemon

 

 

 

 

1.         Use only fully ripe fruit.  To prepare juice pare 2 pineapples and chop

very finely.

 

 

2.         Place in a jelly cloth or bag and squeeze out the juice.

 

 

3.         Measure sugar and 1 ½ lbs juice into a large saucepan and add lemon

juice and mix.

 

 

4.         Bring to a boil and at once add Certo, stirring constantly.

 

 

5.         Bring to a full rolling boil and boil hard for 30 seconds.

 

 

6.         Remove from the heat, skim, pot and cover in the usual way.
