Raspberry Jelly

 

 

 

3 lbs Fruit

3 ¼ lbs Sugar

¼ pint Water

Juice of 1 Lemon

1 Bottle Certo

 

 

 

 

 

1.         Crush the fruit thoroughly and simmer with the water for 10-15 minutes

until tender.

 

 

2.         Place in a jelly cloth and allow the juice to drain.  Measure and add the

water as necessary to make 2 pints.

 

 

3.                  Put the sugar, lemon juice and fruit juice in a pan, and heat slowly until the sugar has dissolved, stirring occasionally.

 

 

4.         Bring quickly to a boil, stir in the Certo.  Boil rapidly for 1 minute,

stirring occasionally.

 

 

5.         Remove from the heat.

 

 

6.         Skim, pot and cover in the usual way.
