Quince Jelly

 

 

 

 

2 lbs Quinces

2 ½ pints Water

Sugar

½ bottle Certo

 

 

 

 

 

1.         Wash and cut up the fruit.

 

 

2.         Simmer in the water in a covered pan until tender (about 1 hour).

 

 

3.         Strain through a jelly bag.

 

 

4.         Measure the juice and add the sugar, allowing 1 lb to each pint.

 

 

5.         Heat slowly, stirring occasionally, until the sugar has dissolved.

 

 

6.         Add the Certo and boil rapidly for 1 minute.

 

 

7.         Remove from the heat and skim if necessary.

 

 

8.         Pot and cover in the usual way.
