Plum Jelly

 

 

 

3 ¼ lb. Sugar

4 lb. Fruit

½ bottle Certo

 

 

 

1.         Use only fully ripe fruit.

 

 

2.         To prepare the juice crush fruit thoroughly but do not peel or pit.

 

 

3.         Add 6 fl oz water.

 

 

4.         Bring to a boil, cover and simmer for 10 minutes.

 

 

5.         Place in a jelly cloth or bag, squeeze out the juice.

 

 

6.         Measure the sugar and 1 ½ pints juice into a large saucepan and mix.

 

 

7.         Bring to a boil and add Certo at once.  Stir constantly.

 

 

8.         Bring to a full rolling boil and boil hard for 30 seconds.

 

 

9.         Remove from the heat, skim, pot and cover in the usual way.
