Pineapple and Strawberry Jam

 

 

 

1 lb Fully Ripe Strawberries

1 Medium Sized Fully Ripe Pineapple

or 1 ¼ lb Tin Crushed Pineapple

3 lbs Sugar

1 tbsp Lemon Juice

½ Bottle Certo

 

 

 

1.         Crush the strawberries.  Peel and core the pineapple and cut into

small pieces.

 

 

2.         Measure the sugar, 2 lbs of prepared fruit and the lemon juice into a

large saucepan.

 

 

3.         Heat slowly, stirring occasionally until the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil rapidly for 2 minutes.

 

 

5.         Remove from the heat and stir in the Certo.

 

 

6.         Stir and skim alternately for 5 minutes to cool and prevent fruit from

floating.

 

 

7.         Pot and cover in the usual way.
