Pineapple Jam

 

 

 

2 Medium Pineapples (1 ½ lb Prepared)

3 lbs Sugar

1 Pint Water

1 Bottle Certo

1 Lemon

 

 

 

1.         Prepare pineapples and chop or crush.

 

 

2.         Measure 1 ½ lbs prepared fruit into a large pan.

 

 

3.         Add the water and cook until tender - about 30 minutes.

 

 

4.         Add the sugar and juice of 1 lemon, mix well and heat slowly until the

sugar is dissolved, stirring constantly.

 

 

5.         Bring quickly to a full rolling boil.

 

 

6.         Boil for 1 minute.

 

 

7.         Remove from the heat and stir in the Certo.

 

 

8.         Skim, allow to cool and then pot and cover in the usual way.
