Pear Jam

 

 

 

3 lbs Ripe Pears

3 ¼ lbs Sugar

1 Bottle Certo

 

 

 

1.         Peel and core and crush the pears completely.

 

 

2.         Put the sugar and 2 lbs prepared fruit into a large saucepan (2 oz root

ginger may be added if desired).

 

 

3.         Heat slowly, stirring occasionally until the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil rapidly for 1 minute.

 

 

5.         Remove from the heat and stir in the Certo.

 

 

6.         Skim and stir alternatively for 5 minutes to cool.

 

 

7.         Pot and cover in the usual way.
