Peach Jam

 

 

 

 

2 ¼ lb. Peaches

3 ¼ lb. Sugar

1 bottle Certo

 

 

 

 

1.         Peel and stone the peaches, chop the flesh.

 

 

2.         If the fruit lacks flavour or tartness, add the juice of 1 lemon.

 

 

3.         Put the sugar and 2 lb. prepared fruit into a large saucepan and heat

gently until the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil hard for 1 minute.

 

 

5.         Remove from the heat and stir in the Certo.

 

 

6.         Skim, pot and cover in the usual way.
