Nectarine Jam

 

 

 

4 lbs Nectarines

½ pint Water

5 ½ lbs Sugar

1 Bottle Certo

 

 

 

1.         Use only fully ripe fruit.

 

 

2.         Peel, pit and chop nectarines very finely.

 

 

3.         Measure the sugar and fruit into a large preserving pan.

 

 

4.         Mix well, adding water and juice of 1 lemon.

 

 

5.         Bring to a full rolling boil.

 

 

6.         Stir constantly before and while boiling.

 

 

7.         Boil hard for 1 minute.

 

 

8.         Remove from the heat.

 

 

9.         Stir in Certo.

 

 

10.       Skim and allow 5 minutes to cool.

 

 

11.       Pot and cover in the usual way.
