Mulberry Jelly

 

 

 

3 lbs Mulberries

¼ pint Water

3 ¼ lbs Sugar

Juice of 1 Lemon

1 Bottle Certo

 

 

 

1.         Crush the berries and simmer with the water for 10-15 minutes until

tender.

 

 

2.         Place in a jelly cloth and allow the juice to drain.

 

 

3.         Measure the juice and add water if necessary, to make up to 2 pints.

 

 

4.         Put the sugar, lemon juice and fruit juice in a pan.

 

 

5.         Heat slowly until the sugar has dissolved stirring continually.

 

 

6.         Bring quickly to the boil, stir in the Certo.

 

 

7.         Boil rapidly for 1 minute, stirring occasionally.

 

 

8.         Remove from the heat, skim if necessary and pot and cover in the

usual way.
