Microwave Peach Jam

 

 

Makes approx. 2 ½ lbs

 

2 lbs 2 oz Peaches

1 tbsp Lemon Juice

1 lb 10 oz Sugar

3 fl oz Certo

 

 

 

1.         Wash the peaches, remove the skin and stones and cut into pieces.

 

 

2.         Place the fruit and lemon juice in a large bowl.  Cook, uncovered, for

12 minutes on FULL POWER, stir half way through cooking.

 

 

3.         Add the sugar and mix well.  Cook on FULL POWER for 8 minutes. 

Stir every minute for the first 4 minutes.

 

 

4.         Stir in the Certo.

 

 

5.         Cool slightly, skim if necessary.  Pot and cover in the usual way.

 

 

 

N.B.     Times will vary according to the power of the microwave oven used.  We used a 700 watt output microwave oven.  Increase or decrease the times slightly to suit your model.
