Microwave Mint Jelly

 

 

 

Makes about 2 lbs

 

2 oz Mint

1 lb Sugar

½ pint White Vinegar

1 Bottle Certo

Green Food Colouring

 

 

 

1.         Wash the mint.  Finely chop 1 oz and put aside.

 

2.         In a large bowl, mix together the sugar, vinegar and remaining

unchopped mint.  Heat on FULL POWER for 8 minutes, or until the

sugar has dissolved.  Stir occasionally.

 

3.         Remove the mint, boil the sugar mixture on FULL POWER for 1

minute.

 

4.         Strain through muslin.  Stir in the Certo and a few drops of green

colouring.  Return to the bowl and heat on FULL POWER for 4

minutes stirring after 2 minutes.

 

5.         Stir in the chopped mint.  Cool slightly and stir again.

 

6.         Pour into warm jars and cover in the usual way.

 

7.         Store in a cool dry place away from heat and light.
