Medlar Jelly

 

 

 

3 lbs Medlars

1 bottle Certo

2 ½ lbs Sugar

¾ pint Water

1 Lemon

 

 

 

1.         Use only fully ripe fruit.

 

2.         Remove pips and do not peel.

 

3.         Cut up and crush.

 

4.         Add ¾ pint water and juice of 1 lemon.

 

5.         Bring to the boil, cover, and simmer for 15 minutes.

 

6.         Place fruit in a jelly bag or cloth and squeeze out the juice.

 

7.         Measure 1 ½ pints of juice and the sugar into a large saucepan and

mix well.

 

8.         Bring to the boil and at once add the Certo, stirring constantly.

 

9.         Bring to a full rolling boil and boil hard for 1 minute.

 

10.       Remove from the heat and skim.

 

11.       Pour quickly and cover in the usual way.
