Medlar Jam

 

 

 

2 lbs Prepared Fruit

3 lbs Sugar

½ pint Water

1 Bottle Certo

 

 

 

1.         Take fully ripe medlars, peel and remove pips.

 

 

2.         To every one lb of prepared fruit, add one gill of water, the juice of 1

lemon and thinly pared rind.

 

 

3.         Bring to the boil and simmer until soft, crushing thoroughly.

 

 

4.         To ever 2 lbs of cooked fruit, add half a pint of water and 3 lbs sugar.

 

 

5.         Heat slowly until the sugar has dissolved.

 

 

6.         Bring to a full rolling boil, and boil hard for 2 minutes.

 

 

7.         Remove from the heat and stir in 1 bottle of Certo.

 

 

8.         Remove the lemon rinds.

 

 

9.         Pot and cover in the usual way.
