Marrow Jam

 

 

 

1 Large Marrow (approx. 3 lbs)

¼ cup Water

3 ¼ lbs Sugar

Juice of 1 Lemon (3 tbsp)

1 Bottle Certo

 

 

 

1.         Peel marrow, discard skin and seeds and cut up finely.

 

 

2.         Put into a saucepan with the water and simmer covered for 20

minutes.

 

 

3.         Put 1 ½ lbs prepared marrow, the sugar and lemon juice into a pan.

 

 

4.         Heat slowly, stirring occasionally, until the sugar has dissolved.

 

 

5.         Bring to a full rolling boil for 2 minutes.

 

 

6.            Remove from the heat and stir in the Certo.

 

 

7.         Allow to cool for 5 minutes and then pot and cover in the usual way.
