Low Sugar Nectarine/Peach Jam

 

 

 

2 lb. Nectarines / Peaches

½ lb. Sugar

4 fl oz Certo

Juice of ½ Lemon

 

 

 

1.         Use only good quality nectarines or peaches.  Peel and finely chop the

fruit.

 

 

2.         Place the fruit in a preserving pan with the lemon juice.  Simmer for 15-

20 minutes or until the fruit is soft. 

 

 

3.         Add the sugar and stir over gentle heat until completely dissolved.

 

 

4.         Bring to a full rolling boil and boil rapidly for 7 minutes.

 

 

5.         Remove from heat and stir in the Certo.

 

 

6.         Pot and cover immediately, using sterile jars and lids.

 

 

7.         Store in refrigerator.  Use within 3 weeks.

 

 

 

N.B.     Mould may grow if jam is made or stored incorrectly.  Discard if this

occurs.
