Lemon and Melon Marmalade

 

 

 

Juice and rind of 1 lb Lemons

4 tbsp Water

Pinch of Bicarbonate of Soda

1 lb Melon, prepared, cut in cubes

3 lbs Sugar

1 Bottle Certo

 

 

 

1.         Pare the lemon rinds thinly and shred finely.

 

 

2.         Squeeze juice from the lemons.  Place shredded rinds in a saucepan

with the juice, water and bicarbonate of soda.  Bring to the boil and

simmer, covered for 10 minutes.

 

 

3.         Add the melon and simmer until tender.

 

 

4.         Add sugar, heat gently, stirring occasionally until the sugar has

dissolved.

 

 

5.         Bring to a full rolling boil and boil rapidly for 2 minutes.

 

 

6.         Remove from the heat and stir in the Certo.

 

 

7.         Leave to cool for a few minutes.

 

 

8.         Skim, pot and cover in the usual way.
