Lemon Shred Jelly Marmalade

 

 

 

1 tablespoon very finely shredded Lemon Peel

1 Pint Water

Pinch of Bicarbonate of Soda

6 fl oz Lemon Juice

2 lb. 10 oz Sugar

1 Bottle Certo

 

 

 

1.         Cook the peel in the water with the bicarbonate of soda.

 

 

2.         Add the lemon juice and sugar, heat gently until the sugar has

dissolved, stirring continually.

 

 

3.         Bring to a full rolling boil, add the Certo, stirring well.

 

 

4.         Boil rapidly for ½ minute.

 

 

5.            Remove from the heat.

 

 

6.         Skim, pot and cover in the usual way.
