Japonica Jam

 

 

 

4 lbs Japonica Fruit

6 pints Water

Sugar

1 tbsp powdered Cloves or other Spices

Juice of 1 large Lemon

 

 

 

1.         Wash and slice the fruit, put into a pan with the water and boil until

tender and then sieve and weigh the pulp.

 

 

2.         Add an equal amount of sugar.

 

 

3.         Bring to the boil.

 

 

4.         Add the powdered spice.

 

 

5.         Continue to boil for 10 minutes and test on a cold plate for setting.

 

 

6.         As soon as it jells, pour into hot dry jars and cover immediately.
