Green Tomato Jam

 

 

4 lbs Green Tomatoes

6 lbs Sugar

Juice and Rind of 4 Lemons

1 bottle Certo

½ pint Water

 

 

1.         Blanch and skin the tomatoes.

 

2.         Put into a large preserving pan with the water.

 

3.         Stir until the mixture boils and then simmer, covered for 15 minutes, or

until tender.

 

4.         Add sugar and lemon juice and rind.

 

5.         Heat slowly until the sugar has dissolved. 

 

6.         Bring to a full rolling boil, stirring all the time. 

 

7.         Boil hard for 5 minutes.

 

8.         Remove from the heat and stir in the Certo.

 

9.         Skim pot and cover in the usual way.

 

 

Tomato Jam

 

 

2 ½ lbs Ripe Tomatoes

3 lbs Sugar

1 Lemon

1 bottle Certo

 

 

Scald and peel the tomatoes.  Boil the uncrushed tomatoes with the shredded lemon rind for 10 minutes.  Add the juice of 1 lemon and the sugar.  Bring to the boil and boil hard for 5 minutes.  Stir in the Certo, mix well and test for jelling, pot as usual.
