Grapefruit Jelly

 

 

 

 

4 Large Grapefruits

2 ¾ lbs Sugar

1 Bottle Certo

 

 

 

 

1.         Grate the rinds of the grapefruits finely, taking care not to use

the white pith.

 

 

2.         Squeeze the juice which should measure 1 ½ pints.

 

 

3.         Add the juice of the grated rinds and stand for 10 minutes.

 

 

4.         Put the sugar and juice into a large saucepan and heat slowly, stirring

occasionally until the sugar has dissolved.

 

 

5.         Add Certo, bring to a full rolling boil and boil rapidly for 1 minute.

 

 

6.         Skim, pot and cover in the usual way.
