Gooseberry and Raspberry Jam

 

 

 

2 lbs Gooseberries

¼ pint Water

2 lbs Raspberries

6 lbs Sugar

1 Bottle Certo

 

 

 

1.         Top and tail and wash the gooseberries.

 

 

2.         Put the gooseberries in a pan with the water and bring to the boil and

simmer covered, for 15 minutes until the skins are soft, stirring   

occasionally.

 

 

3.         Crush the raspberries and put with the gooseberries in a large

saucepan or preserving pan.

 

 

4.         Add the sugar and heat gently, stirring occasionally until it has

dissolved.

 

 

5.         Bring to a full rolling boil and boil for 2 minutes.

 

 

6.         Remove from the heat and stir in the Certo.

 

 

7.         Allow to cool to prevent the fruit from floating.  Skim, pot and cover in

the usual way.
