Gooseberry and Bilberry Jam

 

 

 

2 lbs Gooseberries

2 ¼ lbs Bilberries

Juice of 1 large Lemon

¼ pint Water

6 ¼ lbs Sugar

1 Bottle Certo

 

 

 

1.         Prepare bilberries and put in a pan with the lemon juice and sugar.

 

 

2.         Stand for 1 hour stirring occasionally.  Top and tail and wash the

gooseberries.

 

 

3.         Put them in another saucepan with the water, stir until boiling then

simmer, covered for 15 minutes or until the skins are soft.

 

 

4.         Add to the bilberries and sugar and heat slowly until the sugar has

dissolved, stirring continually.

 

 

5.         Bring to a full rolling boil quickly.  Boil hard for 3 minutes.

 

 

6.         Remove from the heat and stir in the Certo.

 

 

7.         Skim if necessary and allow to cool for 20 minutes to prevent fruit from

floating.

 

 

8.         Pot and cover in the usual way.
