Gooseberry Jelly

 

 

 

 

3 lb. fully ripe Gooseberries

2 ¼ lb. Juice

3 lb. Sugar

½ Bottle Certo

 

 

 

 

1.         To prepare fruit, stem and crush about three pounds of fully ripe fruit.

 

 

2.         Add ½ breakfast cup of water, bring to a boil, cover and simmer for 10

minutes.

 

 

3.         Place the fruit in a jelly cloth or bag and squeeze out the juice.

 

 

4.         Measure the sugar and juice into a large saucepan and mix.

 

 

5.         Bring to a boil over the hottest heat and at once add the Certo, stirring

constantly.

 

 

6.         Bring to a full rolling boil and boil hard for ½ minute.

 

 

7.         Remove from the heat, skim, pour quickly and cover at once.
