Golden Marrow and Ginger Jam

 

 

 

1 Large Marrow (approx. 2 ½ lb.)

¼ cup Water

3 ¼ lb. Sugar

3 tsp. powdered Ginger

Juice of 1 Lemon

1 Bottle Certo

 

 

1.         Peel the marrow, discarding the skin and seeds and cut up finely.

 

 

2.         Simmer the soaked marrow, covered for 20 minutes.

 

 

3.         Measure 1 ½ lb. prepared marrow, sugar, ginger and lemon juice into

a large saucepan.  Mix well.

 

 

4.         Heat slowly, stirring, until the sugar has dissolved.  Bring to a full

rolling boil and boil rapidly for 2 minutes.

 

 

5.         Remove from the heat and stir in the Certo.

 

 

6.         Cool for 5 minutes to prevent the fruit floating.

 

 

7.         Skim, pot and cover in the usual way.
