Four Fruit Marmalade

 

 

 

2 Sweet Oranges

1 Grapefruit

3 Lemons

2 Pears

¼ level tsp Bicarbonate of Soda

1 Pint Water

5 lbs Sugar

1 Bottle Certo

 

 

 

1.         Remove orange, grapefruit and lemon peel and shave off about ½ of

the white pith.  Shred the peel very finely.

 

2.         Place in a saucepan with the bicarbonate and the water, bring to the

boil and simmer covered until the peel is tender, stirring occasionally.

 

3.         Meanwhile peel and core the pears and cut into small cubes, cut up

peeled citrus fruits, discarding pips and tough skin.

 

4.         Add to the shredded peel and continue simmering for 20 minutes.

 

5.         Add sugar and heat slowly, stirring occasionally until it has dissolved.

 

6.         Bring to a full rolling boil and boil rapidly for 5 minutes.  Stir in the

Certo and boil for a further minute.

 

7.         Leave to cool for 5 minutes, stirring occasionally to prevent fruit

floating.

 

8.         Skim, pot and cover in the usual way.
