Elderberry Jelly

 

 

 

4 lbs Elderberries

3 ¼ lbs Sugar

6 tbsp Lemon Juice

1 Bottle Certo

 

 

 

1.         Use only fully ripe fruit.  Remove larger stems, place berries in a large

saucepan and crush.

 

 

2.         Heat gently until the juice starts to flow, then simmer, covered for 15

minutes.

 

 

3.         Place in a jelly cloth or bag and allow to drain.

 

 

4.            Measure the sugar and 1 ½ lbs of juice into a large saucepan.  Add the

lemon juice.

 

 

5.         Heat slowly, stirring occasionally until the sugar has dissolved, then

stir in the Certo.

 

 

6.         Bring to a full rolling boil and boil rapidly for 30 seconds.  Remove

from the heat, skim, pot and cover in the usual way.
