Dried Apricot and Orange Marmalade

 

 

 

¼ lb Dried Apricots

4 Seville Oranges

1 Lemon

¼ tsp Bicarbonate of Soda

4 lbs Sugar

1 Bottle Certo

 

 

 

1.         Soak ¼ lb dried apricots overnight in ¾ pint water.

 

 

2.         Quarter Seville oranges and 1 lemon, remove pith and shred peel.

 

 

3.         Simmer shredded peel in 1 pint water and ¼ tsp bicarbonate of soda

for 20 minutes.

 

 

4.         Measure 2 ¼ pints fruit into a pan, add 4 lbs sugar and a knob of

butter.

 

 

5.         Bring to a full rolling boil.

 

 

6.         Boil for 5 minutes.

 

 

7.         Remove from the heat, stir in the Certo.  Skim, pot and cover in the

usual way.
