Dark Thick Marmalade (Quick Cook)

 

 

 

6 Oranges (medium size)

1 Lemon

1 lb Soft Brown Sugar

3 lbs White Sugar

2 pints Water (& juice)

½ bottle Certo

 

 

 

1.                  Wash the oranges and lemon, cut in half and remove the juice by squeezing.

 

 

2.                  Cut up the oranges and lemon in thick shreds, using a sharp knife.

 

 

3.                  Put the juice (made up to 2 pints with water), shredded peel and pulp in a large saucepan.

 

 

4.                  Bring the contents of the saucepan to the boil, then simmer for approximately 20 minutes (or until skins are soft).

 

 

5.                  Add the sugar, bring to the boil and stir constantly over a gentle heat until it has dissolved.

 

 

6.                  Take off the heat, stir in the Certo, allow to cool slightly (to prevent peel floating) and then pot in the usual way.
