Damson Jelly

 

 

 

4 lbs Fruit

½ pint Water

3 ¼ lbs Sugar

½ bottle Certo

Juice of 1 Lemon

 

 

 

1.         Use only fully ripe fruit.  To prepare juice, crush fruit thoroughly, but do

not peel or pit.

 

 

2.         Add half a pint of water.  Bring to the boil, cover and simmer for 10

minutes.

 

 

3.         Place in a jelly cloth or bag, squeeze out the juice.

 

 

4.         Measure out the sugar, lemon juice and 1 ¾ pints of juice into a large

saucepan and mix.  Bring to the boil and add the Certo at once.  Stir

constantly.

 

 

5.         Bring to a full rolling boil and boil hard for 30 seconds.

 

           

6.         Remove from the heat, pot and cover in the usual way.
