Damson Jam

 

 

 

2 ½ lbs Fruit

3 ¼ lbs Sugar

Juice of 1 Lemon

½ pint Water

½ Bottle Certo

 

 

 

1.         Wash the fruit and put in a pan with the water.

 

2.         Stir until the mixture boils.

 

3.         Cover and simmer for 15 minutes.

 

4.         Add the sugar and lemon juice, mix well.

 

5.         Bring to a full rolling boil over the hottest heat.

 

6.         Add a small piece of butter.

 

7.         Stir constantly before and while boiling.

 

8.         Boil hard for 1 minute.

 

9.            Remove from the heat, stir in the Certo.

 

10.       Skim to remove scum and some stones.

 

11.       Pour quickly and cover.
