Damson Cheese

 

 

 

3 lbs Fruit

½ Breakfast Cup of Water

3 ¼ lbs Sugar

½ Bottle of Certo

 

 

 

1.         Use only fully ripe fruit.

 

2.         Crush thoroughly but do not peel or pit.

 

3.         Put crushed fruit and water into a large preserving pan.

 

4.         Stir until mixture boils.

 

5.         Cover and simmer for 15 minutes or until fruit is quite soft.

 

6.         Force fruit and juice through a course sieve or a colander and remove

stones and skins.

 

7.         Take 2 lbs of prepared fruit and juice making up any shortage with

water.

 

8.         Add sugar, mix well and bring to a full rolling boil over the hottest heat.

 

9.         At once add Certo.

 

10.       Stir constantly before and while boiling.

 

11.       Boil hard for 1 minute.

 

12.       Skim, pour quickly and cover in the usual way.
