Cranberry Marmalade

 

 

1 lb Cranberries

2 Oranges

1 Lemon

3 ½ lbs Sugar

½ bottle Certo

 

 

 

 

 

1.         To prepare fruit, quarter oranges and lemon - seed - slice thinly.

 

 

2.         Add 1 pint water, bring to a boil, cover and simmer for 45 minutes. 

Add the ripe cranberries and simmer, covered for 10 minutes longer.

 

 

3.         Measure sugar into large preserving pan.  Add 3 lbs prepared fruit

making up weight with water if necessary.

 

 

4.         Mix well, and bring to a full rolling boil quickly.

 

 

5.         Stir constantly before and while boiling.  Boil hard for 2 minutes. 

Remove from heat, stir in the Certo and skim, pot and cover in the

usual way.
