Cranberry Jam

 

 

2 lbs Cranberries

2 lbs 6 oz Sugar

½ bottle Certo

 

 

1.         Use only fully ripe fruit.

 

 

2.         Add 1 ½ pints of water to cranberries, for spiced cranberry jam add ½

tsp of cinnamon.

 

 

3.         Bring to a boil, cover and simmer for 10 minutes (sieve pulp if

necessary).

 

 

4.         Measure sugar into large preserving pan.

 

 

5.         Add 3 pints of prepared fruit, making up with water if necessary.

 

 

6.         Mix well and heat slowly until the sugar has dissolved.

 

 

7.         Bring to a full rolling boil quickly.

 

 

8.         Stir constantly before and while boiling.

 

 

9.         Boil hard for 1 minute.

 

 

10.       Remove from heat and stir in Certo.

 

 

11.       Skim, pot and cover in the usual way.
