Cherry Sure-Set

 

 

 

 

2 ½ lb. Stoned Morello Cherries

¼ pint Water

3 tbsp Lemon Juice

3 lb. Sugar

1 bottle Certo

 

 

 

 

1.         Simmer the cherries in the water and lemon juice in a covered pan for

15 minutes.

 

 

2.         Add the sugar and heat gently, stirring occasionally until the sugar has

dissolved.

 

 

3.         Bring to a full rolling boil and boil hard for 3 minutes.

 

 

4.         Stir in the Certo and continue boiling for 1 minute.

 

 

5.         Remove from the heat, skim if necessary, cool slightly, pot and cover

in the usual way.
