Cape Gooseberry Jam

 

 

 

2 lbs Cape Gooseberries

3 lbs Sugar

Juice of 2 Lemons

½ bottle Certo

 

 

 

1.         Use only fully ripe fruit, crush thoroughly add ½ breakfast cup of water.

 

 

2.         Bring to the boil and simmer covered for 10 minutes.

 

           

3.         Measure sugar and 2 lbs prepared fruit into a large preserving pan and

add the lemon juice.

 

 

4.         Mix well, and bring to a full rolling boil.

 

 

5.         Stir constantly before and while boiling and boil hard for 2 minutes.

 

 

6.         Remove from heat and stir in Certo, then stir and skim by turns for 5

minutes to prevent the fruit from floating.

 

 

7.         Pot and cover in the usual way.
