Blackcurrant and Redcurrant Jelly

 

 

 

3 lbs Redcurrants

4 lbs Blackcurrants

2 pints Water

6 lbs Sugar

1 bottle Certo

 

 

 

1.         Wash fruit and crush thoroughly.

 

 

2.                  Put the fruit into a pan.  Add the water bring to the boil then simmer covered for 10 minutes or until the skins are soft.

 

 

3.         Strain through a jelly bag and measure the juice into a pan.  If

necessary make up to 4 pints with water.

 

 

4.         Add the sugar and heat slowly stirring occasionally until the sugar has

dissolved.

 

 

5.         Bring to the boil and boil rapidly for 1 minute.

 

 

6.         Add the Certo and continue boiling for 30 seconds.

 

 

7.         Remove from the heat, skim if necessary.

 

 

8.         Pot and cover in the usual way.
