Blackcurrant and Apple Jelly
9 ox Pureed Blackcurrants
1 ½ lb Apples
3 lb 6 oz Sugar
1 Bottle Certo
2 Pints Water
1. Wash apples, remove blossoms and stem
ends from fruit.
2. Cut apples into small pieces. Do not peel or core.
3. Add water and simmer for 10 minutes.
4. Crush with a masher and simmer,
covered, for a further 5 minutes.
5. Place fruit in a jelly cloth or bag and
allow to drain.
6. Measure sugar, puree and 1 pint of
juice into a saucepan and mix.
7. Bring to a boil quickly.
8. Add a small piece of butter or
margarine and add the Certo at once,
stirring
constantly.
9. Bring to a full rolling boil and boil
hard for 1 minute.
10. Remove from heat, skim, pour quickly and cover in the usual way.
