Blackcurrant Jelly
3 lb. Blackcurrants
3 lb. Sugar
½ Bottle Certo
1. Crush fruit thoroughly and add 1 ¼
pints of water.
2. Bring the mixture to the boil.
3. Cover and simmer for 15 minutes or
until the skins are soft.
4. Place fruit in a jelly cloth and allow
the juice to drain.
5. Measure sugar and 2 pints juice, adding
water to make up for it if
necessary.
6. Heat slowly until the sugar has
dissolved, stirring continuously.
7. Bring to the boil and add Certo.
8. Bring to a full rolling boil and boil
hard for 30 seconds.
9. Remove from the heat and skim, pot and
cover in the usual way.
