Blackcurrant Jam

 

 

 

2 lb. Blackcurrants

½ pint Water

3 ¼ lb. Sugar

½ bottle Certo

 

 

 

1.         Top, tail and wash the fruit.

 

 

2.         Crush well, and put the fruit into a large saucepan with the water, bring

to the boil and simmer, covered, for 15 minutes or until the skins are

soft.

 

 

3.         Add the sugar, stir well and heat gently until the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil rapidly for 1 minute stirring

occasionally.

 

 

5.         Remove from the heat and stir in the Certo - skim if necessary.

 

 

6.         Pot and cover in the usual way.
