Blackberry and Elderberry Jelly

 

 

 

2 lbs Elderberries

1 ½ lbs Blackberries

3 ¼ lbs Sugar

3 tbsp Lemon Juice

1 Bottle Certo

1/8 pint Water

 

 

 

1.         Use only fully ripe fruit.

 

 

2.         To prepare juice, crush fruit thoroughly.

 

 

3.         Place in a jelly cloth or bag and squeeze out the juice.

 

 

4.         Measure sugar and 2 lbs juice into a large preserving pan and mix.

 

 

5.         Heat slowly, stirring occasionally until the sugar has dissolved, add

Certo, stirring constantly.

 

 

6.         Bring to a full rolling boil and boil hard for 30 seconds.

 

 

7.         Remove from heat, skim, pot and cover.
