Black Cherry Jam

 

 

 

 

2 ½ lbs Stoned Black Cherries

¼ pint Water

Juice of 2 Lemons

3 lbs Sugar

1 Bottle Certo

 

 

 

 

 

1.         Put the prepared fruit in a pan with the water and lemon juice.

 

 

2.            Simmer covered for 20 minutes, add the sugar and heat slowly, stirring

occasionally, until the sugar has dissolved.

 

 

3.         Bring to a full rolling boil and boil rapidly for 3 minutes.

 

 

4.            Remove from heat, stir in the Certo.  Allow to cool slightly to prevent

fruit from floating.

 

 

5.         Pot and cover in the usual way.
