Bilberry Jam

 

 

 

2 ¼ lbs Fruit

1 Lemon

3 lbs Sugar

1 Bottle Certo

 

 

 

 

1.         Use only fruit which is fully ripe.  Crush berries and add juice of 1

lemon and grated rind of half a lemon.

           

 

2.         Measure sugar and   2 ¼ lbs prepared fruit into a large preserving pan,

and mix well.

 

 

3.         Heat slowly until the sugar has dissolved then bring to a full rolling boil

for 2 minutes.

 

 

4.         Remove from the heat and stir in the Certo.

 

 

5.         Skim, pot and cover in the usual way.
